Lemon Custard with Blueberries

Dietitian's tip: Tofu — a high-protein bean curd — has a bland, slightly nutty flavor that takes on the flavor of the food with which it's cooked. Here, the silken tofu, along with the soy milk, gives these baked custards a velvety, smooth texture. By Mayo Clinic staff

Grilled Angel Food Cake

Serves 6

Dietitian's tip: Angel food cake is a low-fat, airy dessert that is the perfect finish to a summer meal. If you're using the grill for dinner, grill the angel food cake after you finish your meal. Or, if you prefer, broil the angel food cake until it browns.

Ingredients

1 1/2 cup strawberries,chopped

3/4 cup chopped rhubarb

Warm Chocolate Soufflé

Dietitian's tip: Although these soufflés are made with unsweetened cocoa instead of the usual rich chocolate, their flavor is just as intense. If you can't find fresh raspberries, sliced fresh strawberries will do nicely.  By Mayo Clinic staff

      1/2 cup unsweetened cocoa powder

      6 tablespoons hot water

      1 tablespoon unsalted butter

      1 tablespoon canola oil

Sautéed Bananas with Caramel

Dietitian's tip: The colorful outermost layer of the lemon, called the "zest," is full of essential oils that contribute lively flavor and aroma to this recipe. Remove the zest by grating it with the fine rasps of a hand-held grater to form fine particles.  By Mayo Clinic staff

Ingredients

      2 tablespoons cold water

      1 envelope unflavored gelatin
