1 Tbsp. & 1 Tsp. chunky natural peanut butter
1 1/2 Tsp. honey
1 1/2 Tsp. cider vinegar
1/4 Tsp. curry powder
1 1/2 Tsp. soy sauce
1/8 Tsp. ground red pepper
2 Cup preshredded coleslaw mix
4 thin slices deli-style turkey breast
4 leaves iceberg or napa cabbage

Directions

In a medium bowl combine peanut butter, honey, cider vinegar, curry powder, soy sauce, and ground red pepper; stir well.  Add coleslaw mix; toss to coat. 

Waldorf Salad

Ingredients

1/4 Cup fat-free mayonanaise
1/2 Cup plain fat-free yogurt
1 Tbsp. lemon juice
2 pkg. artificial sweetener
3 Cup red apples, cored and diced
1 Cup celery, diced
1/4 Cup walnuts, coarsely chopped
1/4 Cup raisins

 

Directions

In a large bowl, mix mayonnaise,  yogurt, lemon juice, and sweetener until smooth.  Stir in remaining ingredients.  Mix well. 

Cover and refrigerate at least 2 hours before serving.

1 1/2 pounds green beans, fresh, frozen or canned

1/3 cup diced sweet red bell peppers

4 1/2 teaspoons olive oil or canola oil

4 1/2 teaspoons water

1 1/2 teaspoons vinegar

1 1/2 teaspoon mustard

1/4 teaspoon salt

1/4 teaspoon pepper

Stuffing with Cranberries
