White Turkey Chili           

Ingredients:

16 ounces cooked, cubed white turkey breast                  

2 cups sweet onions, chopped

2-3 garlic cloves, minced

1 Tb. olive oil

21/2 cups fat-free chicken broth

2 15 oz. cans of cannelloni or great northern beans, rinsed and drained

2 15 oz. can of cannelloni or great northern beans, drained and mashed

1 4 oz. can of chopped green chilies

2 cups, canned, drained whole kernel corn

1 Tsp. kosher salt

1 Tsp. dried oregano, crushed

11/2 Tsp. ground cumin

1/2 - 1 Tsp. chili powder

1/2 Tsp. ground red pepper

1/2 Tsp. freshly ground black pepper

 

Directions:

1. In a large heavy saucepan or Dutch oven over medium-high heat, sauté (in oil) turkey pieces and onion for 8-10 minutes.

2.Stir in garlic, cooking just for a minute or two. Stir in broth and the remainder of the ingredients. Bring to a boil, cover, reduce heat, and simmer 20 minutes, stirring occasionally.  (You can add an additional 1/2 cup of broth or so to the two cans of beans to be mashed

if utilizing a blender to mash the beans, creating a smoother

puree of beans to add to the chili.)

3.Serve in soup bowls with toppings of your choice.  Makes 12 cups
